Cheesy Corn Muffins

INGREDIENTS
1 cup Crowley Cottage Cheese
1 cup Crowley Lowfat Milk
2 eggs
1/2 cup packed shredded cheddar cheese (about 2 oz)
2 8.5-oz. packages of corn muffin mix

Preheat oven to 400ºF.
Line muffin tins with paper liners. Combine milk, cottage cheese, and eggs in large bowl. Use electric mixer to blend on medium speed for one to two minutes. Stir in cheddar cheese, and then stir in corn muffin mix until just blended. Do not over mix. Spoon batter into prepared muffin cups, dividing equally.

Bake for 10-13 minutes, or until muffins are light brown on top and tester inserted into center comes out clean. Let muffins cool to room temperature.
