Yogurt Mint Cucumber Salad

spoon of plain yogurtThis healthy and cool summer salad is a nice complement to lamb or salmon.
 
INGREDIENTS
1 cup Crowley Lowfat or Nonfat Plain Yogurt
2 tablespoons extra-virgin olive oil
2 small garlic cloves
salt and pepper to taste
3 medium cucumbers, sliced
1/4 cup mint leaves, minced

Whisk yogurt, oil, garlic, and salt and pepper in a medium bowl. Add cucumbers, and toss to coat. Chill bowl. Chop and add mint just before serving.
