Mediterranean Style Salad with Cottage Cheese

INGREDIENTS
1 1/2 cup iceberg lettuce, chopped
1 1/2 cup romaine lettuce, chopped
1 1/3 Tablespoons plum tomatoes, seeded and diced
2 Tablespoons pepper green, seeded and diced
2 Tablespoons pepper red, seeded and diced
4 Calamata olives, seeded and quartered
1/8 cup red onion, chopped
1/8 cup mushrooms, sliced
Salt and pepper, to taste
1/4 cup Crowley Lowfat Cottage Cheese
1 Tablespoon balsamic vinaigrette

Place all ingredients except for vinaigrette and cottage cheese in a bowl. Toss well. Add vinaigrette and cottage cheese. Mix well.

Serving Suggestion: Serve the salad over a radicchio cup. Garnish with cracked black pepper and parsley or chive.
