Lowfat Cottage Cheese QuichePerfect for lunch or brunch, this quiche is made with the tasty trio of mushrooms, onions and red peppers. Makes about 6 servings INGREDIENTS Preheat oven to 350° F. Bake empty pie shell until light, golden brown, about 15 minutes. In a bowl, combine cottage cheese, Swiss cheese, eggs, onion, red pepper and mushrooms. Mix well. Pour into baked pie shell and sprinkle with bread crumbs. Bake 30 minutes. Remove from oven and sprinkle crushed onion rings on top. Bake an additional 10 minutes. Serve hot. |
