Mouthwatering Meal Solutions

Summer Veggie Bake
Perfect for summer!
Serves 8
INGREDIENTS
2 medium zucchini (sliced)
2 medium summer squash (sliced)
2 large beef steak tomatoes (sliced)
1.5 cups of Italian seasoned bread crumbs
6 oz bleu cheese (crumbled)
16 oz Crowley Lowfat Cottage Cheese
- Preheat oven 350°F.
- Slice the zucchini, summer squash, and beef steak tomatoes.
- In a large baking dish create a layer of the three veggies and then top with some of the bread crumbs, bleu cheese, and cottage cheese (until the veggies are lightly covered).
- Continue with layers of veggies, bread crumbs, and cheese to the top of the baking dish. Finish with a layer of the bread crumbs and cheese on the very top of the baking dish.
- Bake uncovered for 45 minutes or until vegetables are tender and top of the casserole is crispy.

Savory Tomatoes
Quick & tasty!
Serves 8
INGREDIENTS
4 Roma tomatoes or small vine ripe tomatoes
1 cup seasoned bread crumbs
½ cup Crowley Lowfat Cottage Cheese
¼ cup grated Parmesan Cheese
Garlic powder
- Preheat oven 350°F.
- Slice the tomatoes in half, length-wise.
- In a mixing bowl, combine the bread crumbs, cottage cheese, and parmesan cheese. Mix until combined.
- Place the tomatoes in a baking dish. (Tip: remove a small slice of the bottom of the tomato to make it sit better in the baking dish)
- Top with a tablespoon of the mixture.
- Sprinkle with garlic powder.
- Bake for 25 minutes.

Tropical Fruit Salad
Creamy & delicious
Serves 8
16 oz Crowley Lowfat or Nonfat Cottage Cheese
8 oz Crowley Lowfat Vanilla Yogurt
10 oz Topical fruit salad (canned in juice)
1/4 cup chopped pecans
- In a blender, blend the cottage cheese until smooth.
- Drain the fruit salad, to remove the juice.
- Combine the smooth cottage cheese, yogurt, and fruit salad.
- Sprinkle with chopped pecans before serving.
Nutrition Facts per Serving: 128 calories, 6 grams fat, 1 gram saturated fat, 9 milligrams cholesterol, 251 milligrams sodium, 11 grams carbohydrates, 1 gram fiber, 9 grams protein
